AusTAFE Culinary Challenge
Apprentice chefs from Bendigo TAFE (BRIT) Echuca and Bendigo campus Hospitality Department are keen to prove they are amongst the best in their field by taking part in the Aus TAFE Culinary Trophy cooking competition. The competition is run in conjunction with TAFE Institutes and endorsed by the Australian Culinary Federation (ACF).
The competition will take place by way of a ‘cook-off’ on Friday June 5 at both the Bendigo and Echuca campuses. Culinary teachers Greg Broom, Brendan Lethlean, Andrew Denehey and Rick Smolenarrs will be judging the competition which will see the two highest scoring 1st, 2nd and 3rd Year Apprentice chefs compete at the State Final in Melbourne. The State winners will then compete in Canberra at the National Final later this year.
The students must follow set criterion to design, prepare and cook a variety of dishes which will be judged. Predetermined food costs for each dish will be observed. The judging criterion is based on preparation, timing, hygiene, presentation and the taste of each dish.
The Regional final of the AUS-TAFE Culinary Trophy will provide BRIT the opportunity to judge and evaluate the skills and knowledge being taught by both industry and TAFE sectors.
BRIT welcomes the opportunity to provide a stage for culinary students of Regional Victoria to perform and demonstrate their skills. By hosting this culinary competition, BRIT is encouraging and supporting apprentice chefs in their pursuit of culinary excellence.
